Mint Hot Chocolate

Sometimes we some across a very rare moment when our fridge is free from anything sweet and dessert-y for after dinner. These are usually times where we are into our third week without grocery shopping and even the sweet pickled gherkin liquid is starting to look appetising to fix that late night sweet craving.

Luckily for us, and for most households in the country, a few staples can be brought together to make the most luxurious mint hot chocolate you’ve ever tried in your life. I’m a huge fan of a thick hot chocolate such as the ones you can get from the Lindt cafes. You know the one - you can basically stand your spoon up in the cup.

However, as delicious as the Lindt hot chocolate can be. I cringe to think of the calorie count would be in such a beverage. Now, I’m not saying you can’t and shouldn’t have one on occasion! Everything in moderation of course, but when you’re the type of person who lives for their hot chocolate in the late evenings. Well, you can imagine how drinking one every night before bed isn’t entirely sustainable.

This is where my simple little recipe can come in handy! Thick, smooth and rich, it’s sure to satisfy that sweet need. As well as the fact that almost the entirety of the ingredients are pantry staples, you’ll never be left without after dinner sweets ever again! I’m almost inclined to say, you know what, let’s leave the groceries for the fourth week - I don’t need that Cadbury Snack bar after all!

This recipe is customisable. In fact, if you want to take out more of the sugar, feel free to substitute the dark chocolate for unsweetened cocoa. Keep in mind you may need to add additional maple syrup to counteract the bitterness but I have tried it and it is still delicious!

Mint Hot Chocolate

Mint Hot Chocolate

Ingredients

  • 1/2 cup almond milk (or lite)
  • 60g good quality dark chocolate
  • 1tsp maple syrup
  • 1/4 peppermint extract (or to taste)
  • 1 tsp tapioca flour

Instructions

  1. Heat milk and chocolate until melted together and smooth in a small saucepan - stirring consistently with a whisk.
  2. Take 1/4 of the liquid and place in a small bowl. To this, add the tapioca flour and whisk until combined. Add to the milk mixture and stir until thickened.
  3. Remove the saucepan from the heat and add maple syrup and peppermint extract. Stir through before pouring into your favourite mug.
  4. Serve with either a dusting of cocoa or marshmallows.. Or both!
