Fruit & Nut Granola

There’s something to be said about a good homemade Granola. First of all - that it’s incredibly simple and not as time consuming as one would think. Second - You can really put anything you’d like in it and thirdly - say bye-bye to all those complicated nutritional info charts that have all sorts of cheeky high sugar ingredients hiding in them. The control is yours - you can made this with as little (or a lot) of sugar as you’d like!

Strawberries, blueberries and Greek yogurt has been my Granola accompaniments of choice this month.

My hunt for the prefect Granola started years ago. I am a huge advocate for breakfast and can simply not function without it. I like to mix up what I have in the mornings regularly and would always look forward trips to the grocery store in anticipation of a new box of cereal to try. I know - my life is is positively buzzing, you don’t have to tell me..! That was, until early last year when I had found that I’d tired just about everything Coles had to offer and the new releases of breakfast goods had just seemed to have dried up or wasn’t available in my local supermarket.

So what is a lady to do..? A lady makes her own cereal, that’s what she does - in the shape of Granola! It’s truly revolutionary having control of what you can put in it. The thing that seemed to give me the peeves about store-bought cereals was that there were GIANT pieces of nuts, weird dried fruit that I couldn’t even tell were from an actual fruit tree and forget the cereal that claimed it had honey in it.. it was about as honey-ey as an old boot!

Now I’ll admit, writing this has made me realise I have high expectations of my breakfast cereal of choice. As should everyone if I may add - the first food of the day after an 8+ fasting session should be spectacular and absolutely remarkable! A food to set you up for anything that comes hurtling your way during the course of the day; the good and the bad!

So with this in mind I set off to create a Granola that included the finely chopped seeds and nuts that I actually like (I’m looking at you walnuts - you have no business in my cereal!). Apricot pieces that actually look and taste like you guessed it… Apricots! And a wonderfully balanced sweet honey taste throughout. This is what my Granola of choice looks like, but really you can put anything you love in your own. In fact, stir through some chocolate chunks shortly after baking if you’re feeling particularly fancy.

Enjoy creating your own life-changing Granola. At the very least it will give you the energy to deal with accidentally dropping your second cup of coffee on your lap today… I would know!
