Waffles anyone?

So what better way to start the year than with a post dedicated to the worldwide beauty that is the waffle??


I have only owned a waffle machine for about 4 months of my life, which is far too short of a time if you ask me. I like most, have been to a Belgian Waffle bar. Although, unlike most (or maybe more than I think?) the times that I frequented these said bars was in the early hours of Saturday mornings. Stumbling along with a group of friends down one of Adelaide's notorious party areas, desperately trying to find some sort of fibrous foods to soak up the liters of alcohol we'd carelessly consumed.


Luckily for us there was always the sickly sweet smell that lured us behind the main street and into a dark alley which at the end of, were a set of beckoning doors opening into a land of sugar, bright colours and extremely weary looking staff members - progressively loosing their tempers at our confessions of love for them and their waffle magic.


Years after this time of being in my fumbling early twenties, my friend and I returned to this sacred place. But what we found were that the lights were a little less bright, the colours had dulled and the waffles.. Well, they were absolutely abysmal! So I guess the long story is that - I have not ever had the urge to eat a waffle again since then!

That is... Until late last year when Kitchenwarehouse were having a sale on waffle machines and that little part of my brain flared back into life at the thought of just how good those waffles in that dark alley were all those years ago!

So here I am - writing to you with the one and only Cuisinart waffle machine perched proudly and permanently on my kitchen counter. Buttermilk at the ready at all times in my freezer and the golden syrup is plentiful in the pantry. What I'm getting at is that homemade waffles are incredible! Beautifully sweet without making you need an insulin shot afterwards. Fresh from the waffle machine they have this slight crunch that is just magnificent if you ask me. I'm also happy to report that they are still just as fresh and delicious when you reheat them in the toaster for a few moments!

Enough blabbing, I'm going to give you the recipe for the ones that I like to make. This one is from a chef by the name of Joshua Weissman - the man, the myth, the legend! I knew that I needed someone I could trust to deliver a spectacular waffle and he certainly rose to the occasion! Yes, you will need a waffle machine but you are able to pick one up quite affordably from places like Target or Kmart these days. Trust me... You won't look back!
